Mini Greek Pizza Muffins – 40 Calories

• 2 tablespoons olive oil
• 2/3 cup finely chopped onion
• 2/3 cup finely chopped red peppers
• 2/3 flour
• 2 tablespoons baking powder
• 1/2 tablespoon oregano
• 1 tablespoon sugar
• 1 tablespoon garlic powder
• 1/4 tablespoon salt
• 1/3 cup milk with reduced fat
• 1/3 cup feta cheese

 

 

Preparation
Heat the pan on medium fire and when the oil is heated add the onion and pepper, then stir for about 5 minutes until the onion softens. Transfer to a large bowl and leave it to cool.
In a bowl mix the flour, baking powder , oregano, sugar, garlic powder and salt, so that you get the dough for muffins. In bowl with onions and peppers, add the milk, egg, tomato puree and olives.
Once the two compounds will be ready, mix them together until you get a single mixture. Put mixture into pan for muffins. Preheat oven to 180 degrees and place the muffins to print about 15 minutes. Serve warm or at room temperature.
